HERITAGE OF BOURBON VANILLA

The finest vanilla on earth grows on the tropical islands of Madagascar and Réunion, once called Bourbon Island. Together they produce around 80% of the world’s vanilla, nurtured by volcanic soil, tropical sunshine and centuries of craftsmanship. This is where Bourbon vanilla earns its legendary flavour.

PLANTATION

Vanilla plants thrive in the dappled shade beneath palms and other tropical trees. From planting to flowering, patience is key: it takes 2.5 to 3 years for the vanilla orchid to appear. During this time, the vines climb and grow strong, preparing for their first delicate blooms.

VANILLA ORCHID - A TRUE LABOUR OF LOVE

Each blossom is delicately fertilised within this fleeting window, a task repeated hundreds of times. Nearly 600 blossoms yield just one kilogram of beans — true craftsmanship, patience and devotion in every pod.

BEANS

Once pollinated, the beans take 9 to 12 months to mature. When they become yellow it is time to harvest. The vanilla beans are harvested by hand and are treated with extreme caution because of their fragility.

DRYING

After harvest, the beans are dried in the sun for weeks, slowly losing moisture and deepening into their rich brown hue. This careful process unlocks Bourbon vanilla’s signature aroma. From 6 kilograms of fresh pods, only 1 kilogram of cured beans emerges. Pure flavour, rare and precious.

RESTING

After the drying period, the brown vanilla pods are carefully placed in wooden boxes to rest. Over 3 months, their flavour deepens and their aroma blossoms into the unmistakable richness of Bourbon vanilla. This quiet transformation is the final step before the beans bring their magic to Sir Edmond Gin.

1820

French colonists introduce

French colonists introduce vanilla to Réunion Island, hoping to cultivate the valuable orchid. 
But there’s one problem: the island’s native insects won’t pollinate the plant, making commercial cultivation impossible, until a young boy changes everything.

Coming from the island of Réunion, vanilla capital of the world, I take my botanicals very seriously. They are presents of Mother Nature, aren’t they? Carefully combined, six of them give my rebellious spirit its unusual character: Bourbon vanilla (obviously), juniper, angelica root, cardamom, ginger, and cinnamon. Let me introduce you to the true stars of Sir Edmond Gin.

Creating Sir Edmond Gin takes time. The total production process lasts 8 weeks, while a ‘normal’ gin can be made in 24 hours.

After blending, the gin rests for 1 week to let all flavours harmonize. Balance is everything.

The journey from seed to dried vanilla beans takes about 4 years on the tropical islands of Reunion and Madagascar.
